Our Maroulosalata recipe makes a classic Greek Lettuce Salad that is a refreshing and flavourful side to accompany any dish!

When you think about Greek salads, maybe the first thing that comes to mind is the traditional “villager” salad, with feta cheese and chunks of bold summery vegetables. However, that is just one of many amazing salads in Greek cuisine and we want to share them all with you! Greek Lettuce Salad, also known as Maroulosalata or Μαρουλοσαλάτα in Greek (pronounced ma-roo-lo-sa-LA-ta) is a refreshing salad where romaine lettuce is the star. The name Maroulosalata may seem difficult to say but just remember that in the Greek language “Marouli” means lettuce and “Salata” means salad. So now you speak a bit of Greek too!
Too often lettuce is seen as just a filler in salad – something to be covered up with loads of sauce and other ingredients. The Mediterranean diet highlights the importance of eating fresh produce in season and there’s something so delicious and understated about a fresh head of romaine lettuce. The few ingredients and minimal dressing in our traditional Maroulosalata recipe highlight this underrated vegetable’s fresh flavour and crispy texture.
WHY YOU WILL LOVE OUR GREEK LETTUCE SALAD RECIPE
- Delicious – Layers of tasty fresh ingredients that complement each other.
- Easy – Only a few simple ingredients are required to make Maroulosalata. The prep time to make this is only about 10 minutes from start to finish!
- Affordable – Maybe you are lucky enough to grow these vegetables in your garden! If not, they are easily accessible at most supermarkets and only cost a couple of bucks. The most expensive ingredient would be the extra virgin olive oil but this is a worthwhile investment for every kitchen.
- Plant-based – Another wonderful salad where the vegetables do all the talking. No extras are needed – a few fresh garden vegetables and a light dressing make this a wonderful vegan salad.
- Top Allergen-Free – when following this recipe as posted, using lemon instead of vinegar will keep it “top allergen-free” and a safe option for many restricted by food allergies. If using vinegar instead of lemon, the dressing will contain sulphites.

INGREDIENTS FOR THE BEST MAROULOSALATA RECIPE
- Romaine Lettuce – the star of this salad! Romaine is the preferred lettuce for Maroulosalata as it has a wonderful crunchy texture and a slightly stronger taste compared to other lettuces. It is also the most nutrient-dense lettuce so it’s a win-win. Make sure to use fresh lettuce to maximize the fresh and crispy texture. Prechopped and bagged lettuce is not welcome in this dish! The taste and texture just aren’t the same.
- Fresh Green Onion – this is the preferred onion to use as it has a slightly sweet flavour and mild peppery taste.
- Fresh Dill – is an aromatic herb with a slightly sweet and slightly grassy flavour.
- Sea salt and Pepper – sometimes a little sprinkle of sea salt and pepper can make a big difference in adding new taste elements to a dish. This is one dish where it really benefits from the extra flavour.
- Extra Virgin Olive Oil – as with almost every dish in the diet, it just wouldn’t be Greek without adding a great quality Extra Virgin Olive Oil. Adding oil to a salad creates a richness to the salad and helps with the absorption of vitamins and minerals from the vegetables. The heart-healthy components are another reason to love this magical oil.
- Lemon or Red Wine Vinegar – to add an acidic punch to the salad flavour. In Greece, you will find either lemon or red wine vinegar offered as part of the dressing. I love both and switch these up depending on my mood. Try them both and let me know in the comments which one you prefer!

HOW TO PREPARE GREEK LETTUCE SALAD
- Cut off the root of the lettuce at the base and wash the leaves either in a bowl of cold water or under cold running water. Make sure to rinse well to remove any dirt. Carefully dry the leaves with either a salad spinner, a designated food towel, or paper towels.
- Place some lettuce leaves on a cutting board and cut into thin strips. A distinct feature of this salad is the thin strips that make it easier to eat and allow for a maximum amount of all the different ingredients to be on the fork at once. Place in a large salad bowl. Continue until the whole head of lettuce is chopped or the preferred amount is prepared.
- Wash and dry the green onion and dill. Finely chop and add to the salad.
- Sprinkle with some sea salt and pepper.
- Drizzle with extra virgin olive oil.
- Add a splash of red wine vinegar or do as the Greeks, cut a juicy lemon in half, and squeeze it directly onto the salad. Make sure that no lemon seeds fall in!
- Toss together with large salad spoons or tongs and serve right away. Pair with your favourite entrees or meze. Eat, smile, and enjoy!
OPTIONAL EXTRAS AND SERVING SUGGESTIONS FOR MAROULOSALATA
Our recipe as shown is the classic, traditional method, but extras can be added to suit your taste. Fresh cherry tomatoes, sliced and peeled cucumber, or pieces of feta cheese all make tasty optional extras to Greek Lettuce Salad. Balsamic vinegar can also be used in the dressing instead of red wine vinegar or fresh-squeezed lemon juice.
Maroulosalata makes the perfect addition to any meal. Serve it as a side with meats, with meze, with pretty much anything you please. It compliments all dishes and is a wonderful addition to any table. I often eat this salad as a whole meal, topped with some feta cheese, and with a nice piece of crusty bread and some Greek house-style white wine or retsina.
Only prepare this salad before serving as it will get soggy and lose its distinct crunch after adding the dressing. I don’t recommend storing leftovers so only make the amount that can be eaten at the time.

Ingredients
- 1 fresh head Romaine Lettuce finely chopped
- 2-3 sprigs (about 1/2 cup) Fresh Green Onion finely chopped
- 1/2 cup Fresh Dill finely chopped
- a dash Sea salt and Pepper
- 1/4 cup Extra Virgin Olive Oil
- 1/2 about 2 tbsp Lemon freshly squeezed
- OR A few splashes Red Wine Vinegar
Instructions
