Equipment

  • 1 sieve or cheese cloth
  • 2 bowls
  • 1 garlic press
  • 1 cheese grater

Ingredients

  • 1 cup plain, full-fat Greek yogurt
  • 1 large cucumber
  • 1/4 cup extra virgin olive oil PLUS 1 tsp to drizzle on top before serving
  • 1/2 tsp sea salt
  • tsp red wine vinegar
  • 1 large clove of garlic peeled
  • 2 tsp finely chopped fresh dill **OPTIONAL**

Instructions

  • Wash a large cucumber, cut off the tips, peel the skin, and shred it with a cheese grater. Place the shredded cucumber in a sieve or a cheese cloth over a bowl and set aside for a few minutes.
  • In a separate bowl, add the Greek yogurt, extra virgin olive oil, sea salt, red wine vinegar, pressed garlic, and optionally, you can also add fresh dill.
  • Next, with all the strength and power of Hercules, squeeze all the moisture from the shredded cucumber. You can use your hands or a cheesecloth. The end result will be 1/2 cup of shredded cucumber and over 1/2 cup of cucumber juice.
  • Add the strained, shredded cucumber to the bowl with the other ingredients and stir. Continue stirring until the golden ribbons of extra virgin olive oil disappear.
  • Refrigerate for a minimum of 30 minutes to allow the flavours to meld together. Serve cold with an additional drizzle of extra virgin olive oil on top. Smile and Enjoy!

Notes

Serve as an addition to any Greek meal, as a meze, or accompanied with bread, breadsticks, grilled pita, cooked vegetables, grilled meats, seafood, french fries, or in souvlaki. Or simply eat it by the spoon!
Store leftover Tzatziki in an air-tight glass container in the refrigerator for up to 3 days. I do not recommend freezing this dish as the texture will not be pleasant.
