Equipment

  • Instant Pot

Ingredients

  • 1 kilo (approx 10 cups) okra frozen
  • 1 medium red onion finely chopped, approx 1 cup
  • 2 cloves garlic peeled and finely diced
  • 1 large carrot peeled and thinly chopped
  • 3/4 cup parsley chopped
  • 4 tbsp tomato paste
  • 1 bouillon cube vegetable or chicken
  • 2 tsp sugar
  • 2 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1/2 cup extra virgin olive oil
  • 3/4 cup water

Instructions

  • Put all of the ingredients in the liner of the Instant Pot. Mix well to combine all ingredients together.
  • Close the lid of the Instant Pot and turn the release valve to the closed position. Set the manual pressure cook timer to 3 minutes.
  • When the cooking is complete, allow Natural Pressure Release to happen for 3 minutes. After 3 minutes, carefully turn the pressure release valve to allow for a quick pressure release.
  • Carefully remove the lid once pressure is released. Lightly mix the Greek Okra Stew to combine the flavours, making sure to be gentle as the okra are delicate and fall apart easily. An alternative to stirring them is to lift up the liner with oven mitts and give it a little swirl to combine.
  • Serve Greek Okra Stew while warm and on a dish. Optional extras mentioned in the Serving Suggestions listed below can be added and served along with the stew depending on flavour preference. Smile and Enjoy!

Notes

COOKING NOTES: Do not allow this recipe to do a full Natural Pressure Release as it will overcook the okras and they will fall apart.
SERVING SUGGESTIONS: Greek Okra Stew is hearty enough to be served as an entree. It also goes really well as a side dish along with roasted or rotisserie chicken. For a fully balanced meal, serve with a slice of feta cheese and thick crusty bread to soak up the tasty, oily sauce.
STORAGE INSTRUCTIONS: Store leftover Bamies Laderes in an air-tight container in the refrigerator for up to 3 days. Leftover Bamies Laderes can also be stored in an airtight, freezer-proof container in the freezer. Keep in mind that storing it in the freezer will change the texture slightly and make the okra soggier after reheating. It can be stored in the freezer for up to 3 months.
